Chestnut Cream
Ingredients
Chestnut from Soutos da Lapa PDO
Chestnuts
Potatoes
Salt
Pepper
Chorizo
Onion
Thyme
Celery
Leek
Olive oil
Chicken broth
Garlic
Preparation
Start sautéing with olive oil, onion and garlic
Add fresh thyme
Add celery and leek and let everything sauté
Season with salt and pepper
Add chestnuts and potatoes and mix well
Add a drizzle of olive oil and let it sauté well
Add water and chicken broth and let it cook for about 30 minutes
For the garnish, sauté previously chopped chorizo and chestnuts with a drizzle of olive oil.
Grind the chestnut mixture to the desired creaminess
Finish with crunchy chestnuts and chorizo, fresh watercress leaves and thyme oil
