Chestnut Soup
Ingredients
Chestnut from Soutos da Lapa PDO
Olive oil
Garlic
Leek
Mint
Bacon
Onion
White beans
Potatoes
Turnip
Preparation
1.
Prepare a stew with olive oil, garlic, leek, mint and a piece of salted bacon.
2.
Sauté everything until the onion is soft and add the chestnuts.
3.
Add white beans and gradually add the water from cooking the beans.
4.
Add the potatoes and turnip.
5.
Taste for salt and rectify if necessary.
6.
Remove the bacon and grind the whole mixture.
7.
Finish with mint leaves or, optionally, half-moon slices of onion.
