Corn porridge (Papas de relão)

250 gr Maize semolina

1 litre milk

1 cinnamon stick

Q.B. Sugar

Lemon peel

Preparation

1.

Rinse the cornflour well until all the powder is gone and the flour is coarse. Bring the milk to the boil in a saucepan with the cinnamon stick and lemon zest to infuse and flavour the milk.

Add the semolina, which you have previously washed, and cook.

When the mixture is creamy, add the sugar. Cook for a further 2 minutes and switch off.

4.

Remove the cinnamon stick and lemon zest and serve. If you like, sprinkle with cinnamon.
