Rib Rice with garlic sauce
Ingredients
Sausages
1 tablespoon chilli paste
2 chopped garlic cloves
2 branches rosemary
1 bay leaf
250ml white wine
1 tablespoon lard
200g boiled red beans
600g ribs cut into pieces
220g rice
750ml beef stock
Q.b. chopped parsley
Q.b. salt and pepper
1 dried chili pepper
75g sliced chorizo sausage
3 tablespoons tomato pulp
1 chopped onion
Preparation
Season the ribs with salt, garlic, chilli paste, bay leaves, rosemary and white wine. Marinate for at least 3 hours.
Melt the lard in a pan, add the chorizo and the well-drained ribs and let them brown.
Remove the chorizo and ribs and add the onion, garlic and chilli. Leave to sauté.
Add the chorizo and ribs again and add the tomato pulp and marinade and cook for 5 minutes.
Add the meat stock, rice and beans. Cover and cook for 18 minutes or until the rice is cooked.
Season if necessary and add parsley.
