Apple Senses
Ingredients
Apple Bravo of Esmolfe PDO
Cereal crumble
Cream
Whole milk
Dehydrated apple
Lime zest
Egg yolks
Powdered sugar
Preparation
1.
Start by beating the egg yolks with powdered sugar
2.
Emulsify until smooth
3.
Add the cream (90% cream + 10% whole milk) and stir continuously
4.
Add the mashed apple, previously made from the roasted apples, to the mixture
5.
Transfer the mixture to a baking tray and bake for 1.30 hours at 90º
6.
Finish with a scoop of apple ice cream, cereal crumble, dehydrated apple and lime zest.
