White Chocolate and Olive Oil Mousse

Ingredients

White Chocolate

Fleur de sel

Olive oil pearls

Preparation

1.

Start by melting the white chocolate with olive oil in a bain-marie.

2.

Emulsify well and add a little fleur de sel

3.

Add a drizzle of olive oil to the mixture over the heat

4.

Place the mixture in an inverted bain-marie with ice to obtain the desired consistency.

5.

Finish with a drizzle of olive oil, olive oil spheres, microgreens and crunchy oats.
